Simple Fresh Salad
There are always those extra few minutes to make this simple salad! It's one of my favorite "always have ingredients salad". When lettuce went bad.... I simply started making it to accompany a grilled piece of chicken or fish, and now it's one of my favorites. I will also make a good size portion and later add also vegetables.
3 cups of sliced cherry tomatoes
1/2 English cucumber (thinly sliced or diced)
1/4 Medium Red onion (thinly sliced and soaked for 10 minutes in a small bowl of ice water to make it less sharp)
1/4 cup of chop parsley
Mix all the ingredients and place feta cheese on top.
1 slice of Feta Cheese
Salt / Pepper
Lemon or Lime Juice
